This is a maitake mushroom, or hen-of-the-woods. They’re in season right now, and this one was given to me by a friend and colleague.
I’ve never eaten (fresh, anyhow) or hunted this kind of mushroom before–having restricted my foraging to morels and puffballs because that’s what I was taught to identify and hunt by other, more seasoned “shroomers.”
Now that I have a new kind to look at (and to eat!), I can add another variety to my foraging and wild food repertoire.
